Our Wines: Reserve - Chardonnay

The wine is rich, and complex, with dominant notes of tropical fruits, vanilla and smoke. I specially recommend it for seafood, white meat and soups.

Variety: Chardonnay

 

Region: Casablanca Valley

 

Wine making details:

All the stems of the grapes are removed. The berries are crushed and protected from the air using antioxidant sulfur dioxide and inert gas blanketing. The must was cooled to reduce the temperature immediately after crushing to maintain flavors and aroma and reduce the level of SO2. Pneumatic pressing separating two press fractions. The juice clarification is by gravity at 10ºC with pectic enzymes. Fermented in French barrel at 16ºC. Just 15% of the wine makes the malolactic fermentation.

 

Tasting notes:
Color: Golden colour with greenish hues.
Aroma: Rich and complex flavours, with layers of melon, apricot, exotic tropical fruit, hazelnut, vanilla and smoke.
Palate: Balanced wine that offers richness and depth. Flavours keep coming on the long, complex aftertaste.

 

Cellar Potencial: 4 years.

 

Aging: Fermented in French barrels and approximate 10% malolatic fermentation. The wine has kept in barrels 10 month before been bottle.
